Protein pancakes

If you get the huge container of cottage cheese at Costco and can't seem to finish it this is a great way to use it up!! Also if you find if for a great deal, stock up and make some pancakes!!

serves 2-3 people (depending on appetite)

1 c. cottage cheese
4 eggs
1/3 c. flour
1/2-1 t. vanilla
1/4-1/2 t. cinnamon

Blend it in the blender then cook up some cakes!

Annie's sauerkraut meatballs

Meatballs
2 lbs. lean ground beef
1 c. bread crumbs
3 eggs
1 pkg. Lipton onion soup mix

Sauce
12 oz. Heinz chili sauce
16 oz. can whole cranberries
16 oz. sauerkraut (drain well & discard juice)
1 c. brown sugar
12 oz. water

Combine all ingred. for sauce and simmer for 1/2 hour. Mix meatball ingred together and form walnut size balls. Brown meatballs them place in pyrex pan single layer. Pour sauce over top of meatballs and either freeze or bake 325* for 1 1/2- 2 hours uncovered. Serve over rice, noodles or just with a toothpick. I prefer rice. If you do freeze you can go from the freezer to the oven and let it bake longer, just don't preheat the oven.

Cherry Squares

When I think of this recipe I think of Greg Andrews. He LOVED this as a kid and would always want it for his birthday! Definitely not easy on the waistline but darn good tasting!!!

1 1/2 c. butter
2 3/4 c. sugar
3/4 t. almond flavoring
3 3/8 c. flour
3/4 t. salt
6 eggs
1 1/2 t. vanilla
2 1/4 t. baking powder
2 large cans cherry pie filling

Cream butter with sugar. Add eggs one at a time and beat well. Add dry ingredients. Spread 3/4 of the batter on a cookie sheet. Cover with cherry pie filling. Use the reserved 1/4 of batter to spread on top on pie filling. Bake 350* for 45-50 min.
